Lot of things and all the things, however you now have to start from scratch...
Try check there old documents and follow the flow till pricing and account assignment. This way you'll have a fair idea as to what kind of documetns they use there pricing procedures, the shipping procedures, packing methods batches if used and differen enhancements if they have.
If they have their development server try creating documents similar to the ones in production and again follow the SD flow...
Actaully the list can go long and long....
You have the ball just keep on hitting it in any direction and see how it comes back.
