Is it a must to use a server certified on this list?
I am looking at PowerEdge R730, however, my hosting provider can only provide PowerEdge R720.
Does it make a difference?

As far as I know HANA must run on certified hardware to get support from SAP in case of performance problems. So the answer is "Yes".
Maybe talk with DELL and/or SAP directly to get a definitive answer.
