How to customize info type assign to object type O

Dear exports

We need to save every day how many people work in the kitchen, we won't manage them on HR sap. We prefer not to save names, only number of workers, which are not with PERNR.

We have a kitchen at every organization unit , there are some hundreds of O.units with kitchen, they should report numbers of kitchen's workers.

I thought of using object O at pp01 transaction, but I don't know how to customize / use.

Someone has any idea how to solve it?

Do I get it by transaction PP01?

Have you tought of using the Org Unit's IT1002, with a distinct Sub-type (such as 9001 or CAFE) to record the number of Cafeteria Workers?
