How delivery type is being determined in S/4HANA Public Cloud?

Hi Experts,

1. I am trying to figure out how delivery type is being determined in S/4HANA Public Cloud. From the following link, I understand there are no copying control from sales document to delivery document in S/4HANA Public Cloud. Also, I could not find anything in the Custom Logic app as well.

2. We cannot even create new sales document type.

3. I could not find item category settings:

So, where all the item category controls like billing relevance, stock category, pricing relevance, return indicator etc have moved?
