Pinning the page browser in reading mode will be possible with the up-coming release BI 4.3 SP4.

It's look like first point is not possible. Either you can set the print layout mode set in the design mode and save it.. so no need to change it all the time.
For the second point, you can place the =numberofpages() in the blank cell header/footer or under the Insert->Insert cell there are prebuilt functions are there to show page number/Total Pages

First point:

Second:
As workaround I set the =numberofpages() in the report header, it works well. But it would be better to habe the information in the page browser.
