Journal Entry Workflow Setup

We wanted to setup backup approvers in journal entry workflow. Please let me know how do we go about this. 

In our existing configuration, we were able to trigger workflow for first level approvers; however if the approvals needs to be routed to next level after a duration or if the first level approver is not available, how do we do this.

The "Manage workflows for general journal entry verification" Fiori app is used for setting up a general journal entry verification process in which you can configure conditions that require verification and authorizations for approval.
