you are asking help in understanding and the answer is the client's store experienced some connectivity issue and therefore the delay in posting but Customer Checkout is OFFLINE capable so no concerns

In the CCO, check the settings under Configuration > Integration > SAP Business One and also check if the connection is working fine under Configuration > Integration > SAP Business One > Check Connection and Authentication
