Mapping with your and ur partner system, need to be identified, with mutual discussion.

You can use transaction WE16 to see Idoc Segment documentation. Steps to customize a new IDoc >>>

1. Define IDoc Segment (WE31)

2. Convert Segments into an IDoc type (WE30)

3. Create a Message Type (WE81)

4. Create valid Combination of Message & IDoc type(WE82)

5. Define Processing Code(WE41 for OUT / WE42 for IN)

6. Define Partner Profile(WE20)

U can check the same via transaction WE30..once you select the object. It would list the attach segment type and on double-click it pops up with details and with a button on bottom for segment fields.

On selecting the same, it would list the fields of the IDOC.

Basically, the file from application A is sent via IDOC to SAP...

IDOC segments would have the details of how it is interpreting the file.

In SAP you would find that in the FM attached to the IDOC processing.
