ECR / ECO define changes to be done

Dear all,

I'm looking forward to implement a tool that could support the business to create a change request that would enable them to define the changes to be made.

I've been thinking about ECR as you can define on which object the change needs to be done but I didn't found where to define a kind of list of fields that are changeable. The system would provide the current values and the user can request to change those to a new value X.

Then, approval workflow and then the changes are valid in the system

Is there any functionality covering this?
