I want to know which is the best scenario for pallets' tracking. Could be some differences between number of pallets from picking and the real number of pallets from truck .

Initially you can have serial number management for your pallets or batch management.
If you have to tract your pallets that are sent and returned to/from a customer this is standard returnable packaging.
So for things like CHEP pallets etc this give you want you want and need.
