How does company going to affect user access from security perspective

In SAP E-Sourcing 7.0, I see a user is mapped to a company code and company is only determining few attributes like user defaults, address etc...however an organizational unit is only able to determine the Legal group approvers, for business docs like RFx, Auction, Contract agreement etc...

For example. if there is a requirement of some different fields / views, based 2 different companies or org units, how can this take effect through security restrictions.

Plz elaborate..Do you need different fields in Buy Side User Account or business document ?
