How can I add additional fields to T-Code F-03. (specifically "material")

Why you want material for clearing?

any how the setting is in

Financial Accounting (New) - General Ledger Accounting (New) - Business Transactions - Open Item Clearing - Open Item Processing.

Any one of the option will work for you.
