DATA move from CRM to ECC6 Vs SAP S4 HANA 1809

Our project is conversion of ECC6 EHP 5 to SAP S/4 HANA 1809.

we need to move open quotation, Sales orders from CRM to SAP, then we will retire CRM system.

We need to do few configurations-like quotation, sale order related in SAP ECC6 or 1809 before moving open quotation, SO from CRM to SAP-ECC6 or 1809.

We have completed the Pre-conversion tasks(All SI errors are fixed, Vendor, customer are converted to BP)in ECC6 ehp5 system.

We need to start the conversion using SUM Tool.

After conversion, we will do post conversion tasks-delta config, data migration, post data migrations tasks.

Please clarify, whether we need to complete all SD Related configuration -like required quotation types, sale order types and move the data-open quotation, SO from CRM to ECC6 before starting the conversion using SUM

or

we can do these config and move open quotation, SO from CRM to SAP S/4 HANA 1809 after conversion

or

we can do these config and move open quotation, SO from CRM to SAP S/4 HANA 1809 after post conversion tasks.(delta config, data migration, post data migration)

Please advise immediately. because the whole team is waiting for this decision .
