We're putting the finishing touches on our 4x to 7x upgrade and one of the biggest complaints I'm getting is the lack of a default process menu as existed in the 4.2 and previous versions. Is there a way to script that the custom menu appears instead of the 3 globe excel screen? If not, is there a way through the BPC web to develop a default custom menu that accesses the worksheets in BPC for Excel?

Not possible. We're a longtime 4.2 customer and have been asking for this since 5.0 came out. Apparently SAP doesn't understand the value in having users login through a process menu / custom menu. It's also nice that they make you login through the web even if you only plan on using BPC for Excel.
The suggestion I got from their RIG team was to create a web page with hyperlinks that would open different custom menus. The only problem with that is there is no security around it and what they are calling a custom menu is really just an excel sheet and wouldn't give you the custom menu tool bar or ability to set current view overrides, so not a great suggestion.
The other tip was to create a seperate workbook that called launched a macro on open that would take you to the custom menu selection. The only problem with that is that they deplicated the MNU_eTOOLS_TOPROCESSSELECTOR function - which is the one we would have wanted to launch.
Hopefully someone will come up with better news, but I think you're S.O.L. on this one... we're resigned ourselve to the fact that all users will have to make a bunch of extra meaningless clicks in order to select and launch their custom menu from the action pane upon login. We'll then have them hide the action pane since it does nothing for us except hide the report data our users are interested in...

As of v7.0 sp3, you can replace the 3-globe image with your own. It i an appset parameter.
from the sp3 release notes: An application set parameter named Company_Logo is supported. You can set a company logo image on a default workbook of BPC for Excel. See SAP Note 1287629.
