Systems & Process mapping before S/4 introduction

Hello Experts,

Lets say a bigger production company is considering introduction of S/4 Enterprise management instead of various legacy systems in their production and supply chain. What would be the best way of evaluating the current systems and processes and find out where could be S/4 implemented?
