Hello,
Currently, in the email subject, I'm getting the following:
Subject: Document /wpccontent/Sites/HR/Site Content/5d0154021d8d0b1c80207922967c9903.xml was approved
I would like to change the subject to the document's name. How do I go about it?

You can do it here.
Content Admin->Collaboration Content->(Related Links) Configure Room Mails.
Here find your subject and change it according to your requirment.

I've checked the relevant XML/XSL file in etc/notifications but I cannot seem to find the attribute for email subject.
The files seems to cater for the email content.
Any ideas if the email subject is there? IF so, what's the attribute name?

If i remember correclty
Email mail text/subject will be taken from some XML and XSL files(like SUBSCRIPTION_en.xml,SUBSCRIPTIONADMIN_en.xml) in KM. Those files are in /etc/notifications/ folder.
These files are language dependant and you can change those files as per your requirements.
