Where can I see the document type within tx IW31/ IW32 ?

I'm assuming you mean Order Type and not document type (see TCode IW31).
These Order Types are created in the IMG and take quite a lot of time/experience to set up.
If you are not familiar with the process of creating new Order Types, then I suggest you attned the PLM300 (PM Overview) and PLM315 (Maintenance Processing: Operational Functions) courses

Dear Ilhan Ertas
At the time of order creation (In transaction IW31) you can view the order type for the the particular plant on initial screen of the order in the field order type.
In IW32 transaction, You can view the order type field beside the order number field.
you can view all order types for the particular plant.
