Advice on Curricula Configuration for Start-up - Existing Employees

I'm looking for some advice/lessons learned from others who have migrated from another LMS to SF Learning? Specifically I'm looking for some tips on how to handle the records of existing learners vs new employees. Due to a system constraint around a date field, I need to assign the latest new starter curricula to ALL employees in the business, regardless of their length of employment. The problem I am facing is that more recent training may not have been available to longer term learners so it was never assigned to them.

I have a solution in mind, but it is not simple and requires a lot of data analysis/creative thinking to map exactly what is in our current LMS over to the new one (which is due to go live in two weeks time).

I'd really appreciate some assistance if possible, so I can ensure the transition to the new SF LMS is to be a favourable one for our workforce.
