For various types of auditing entries (insert, update, etc), in ASE 16 SP03, we're seeing the SQL text in the extrainfo column (role info too)
That's nice in theory, but it dramatically increases the size of the audit db for high volume applications.
Is there an option to turn this off?

Short answer no.
You can get the data out of sysaudits_xx tables using thresholds + scheduled jobs to any user user defined table. So you can pick and choose what you want to retain/copy. Nice thing is SAP/Sybas has provided upto 8 sysaudits_xx tables to roll the data in a round robin fashion.
