Recently we had errors on our automatic feed and learned it was because the WOTC start date (in either Recruiting or Onboarding) was too old; however, we are unable to find information on what the WOTC start date is and where it originates from. Would also like to know what the letters stand for.

The WOTC(pronounced as Watt-See) acronym stands for Work Opportunity Tax Credit.
It is a Federal tax credit available to employers for hiring individuals from certain target groups who have consistently faced significant barriers to employment. It ultimately reduces employers’ federal income tax when they hire veterans, the unemployed and others experiencing economic distress. Most employers already hire people who would qualify.
SAP SuccessFactors Onboarding supports such TaxBreak feature integration with 3rd party partner terms.

WOTC Start Date is an important field in Onboarding which represents the Hire Date of a candidate.
Usually the candidate's start date of the employment, that is captured in Recruitment, is mapped to Onboarding's WOTC Start Date.
