How to parameterize the Priority in BPM?

Hi experts,

In BPM Inbox there is a column called 'Priority'. It has below values:

VERY_HIGH (Very High)
HIGH (High)
MEDIUM (Medium)
LOW (Low)
VERY_LOW (Very Low)

1. Does anyone know when Priority is changed from one value to another, that's to say, from VERY_LOW to next one, until VERY_HIGH, and reversed?

2. If the change behavior doesn't meet my requirement, can I customize the behavior?

3. Is it possible to allow the end-user to select the default value of Priority? Because now Priority is not parameterized. Default value can only be selected when developing.

You can check this blog about oData. I think you will need to custom development something to take this.
