Customer hierarchies are used mainly for pricing and reporting and it is exactly what it says - hierarchy. For example, a company might have a head office and multiple divisions across the country. If you setup the corresponding hierarchy you will have the head office as your hierarchy node 1 and all the national divisions as hierarchy node 2 if these multiple divisions have multiple branches you can set up a node 3.
Then you can apply pricing at hierarchy node 1, in which case it will just default to all other nodes, or you can apply at node 2 or you can still apply individually. Same goes for reporting.
Look at your configuration for sales and distribution - master data
