What's the best way to setup something you want to sell but don't actually keep qoh (stock).

For example if you wanted to sell 'Designing process of making a Product'. You don't stock it but you do have a cost in someones time to draw the product & then you have a selling price to sell it to a customer.

If you untick the 'stock item' it doesn't let you sell it as the quantity goes to negative.

Is there a particular best practice for setting something like this up?

I changed the valuation to 'Standard' on the item. This allows you enter an item cost against it. I can then sell it without the need to maintain purchase documents or Quantity on hand.
