Hi jay
For freight related , check incoterms ,field name is incoterms( 1+2)
Plz check the following tables at order and delivery levels
VBAK - sales doc header
VBAP- sales doc item
At delivery level you can check at
VEPO - sales doc shipping item content
VEKP -shipping unit header
For shipments
VTTP - shipment item
VTTK - shipment header

Thanks for recollecting the main tables which i have not mentioned in my previous reply.
But those are the tables where exactly the freights data are stored and those tables are interlinked to the given tables as what you said. Like LIKP is interlinked to VEPO and VEKP.
These are the tables where you can find the freight data
VBKD - Sales Document - Business Data
KNVV - Sales Area Data (terms, order probability)
Just to add what brian said, what ever we maintained in KNVV table that will be flowing to the VBKD table in sales order.As system gives priority to KNVV table .

You can check the Incoterms in Sales Document (Tables VBAK and VBAP)
Regarding Shipment tables....you can check the tables VTTK and VTTP (Header and Item)
