I read that it Multi Mapping N:1 is possible in BPM with Transformation but how do you do it?

BPM is usually used for multimapping mapping scenarios.
Check this weblog for a step by step procedure:
N:1 without BPM is not possible.
However there is a nice way to collect multiple idocs without BPM

Best example would be Collect messages. The scenario would be collect all messages and produce single message. If you want to implement multimapping N:1, then in your source message of messae mapping change the occurrence as 0..unbounded and target as 1. So it means the souce structure can occur many times and target only 1. Everything is achieved in mapping. Also don't forget to change the source occurrence of Interface mapping too.
