How to do mapping for SF ONB with SAP HCM?

Hi,

I am integrating SF ONB with SAP HCM using the standard Integration Add-on 3.0. And I am following the below document

My question is

1. Where do I do these step ? means Sap PI system or SAp Ecc System.

2. I have some custom fields in SF. For mapping if I use a simple table to map the fields then please tell me step-by-step process about this.
