In simple words, account determination allows you to allocate a GL account to a particular transaction like foregin currency exchange rate differences, changes in inventory etc with the help of a transaction key. For example inventory postings that occur in Materials Management can be captured by GL account through account assignment. This is necessary as FI needs to have updated record of inventory as it is an asset. Thus FI accounts are automatically updated through account assignment.

I won't try to give you a technical answer, I'm sure I'd miss the mark. What I can do is point you to a reference I have found that I think will.
You can even browse the book on line and read various sections to get a better idea if the book will help.
I hope that helps.
