In our workflows, we send out notifications on the SAP inbox/Business Workplace of the user..
Can the Email notifications be sent to Universal Worklist instead ?
(In workflow - Activity used is Send Mail )

Yes, This is possible and has been discussed already in this forum. You need to install SONIC connector for this. For more details please search for the keyword "SONIC" in SDN.
