How can I view employee grade and grade history in the system (i.e to and from dates and the applicable grade)?

In which infotype / table did you maintained the Employee grades??
I'm unsure, I belive it's in InfoType 0008.

Goto SE11 or SE12 and enter the table name PA 0008, then display the table. Use CtrlshiftF10 it'll show the table view. From those fields you can select / type your req and execute. It'll show the list of employees grades. Hope it'll help you.
