The various planner profiles are delivered by SAP to meet various requirements of the users. You need to see them to choose the one profile which meets your business requirements. in case you are not satisfied with all of the profiles, you can create your own profile by copying the SAP supplied profile and changing the fields as per your requirements.
Different profile means there are different format, base currency, customization behind them and so on. I think most of them is in controlling area currency. We create an extra one which is based on company code currency.
