incoming orders are those orders which u receive from the customres

and

sales volume is the total value of orders delivered or the total sales done by a company

Assume that you run a small unit and you receive an order which you will update in your system. This is called incoming orders.

Sales value (<i>I presume you intend to write value</i>) is the total despatch made to all customers in a particular period.
