If I view a DB Connect datasource on the extraction tab I have a box which is labelled Table/View.
Does this field hold the name of the actual Table/view in the source database from which the data is extracted? Thanks

Yes,these are the actual tables/views which are available in the source database.
You could login into the database & would be able to find the tables/views with the same name.
