Delete a Sales Employee from the Sales Opportunity list

Hi all,

Is it possible to remove or display only current Sales employees from the Sales Opportunities options as my client would like this list to only display active Sales Employees. The problem is that because the sales employees has already had transactions posted against him/her, one cannot delete the Sales Employee. The System says Cannot delete, code is in use.

Any ideas would be appreciated
