Can anybody provide a solution for finding a particular user's last 7 days login information in an SAP R/3 server?

Try that out with STAT and SUIM with change documents.

Which login are you asking about (application server, DB, OS)?
Application server
Check the audit logs using transaction SM20 (this will only work if the audit log was setup previously using SM19).
