Block the change of a document during somo time

Someone can tell if is possible to block the access to a file during some time or between the hour A and the hour B?

what do you have in mind? Do you want to restrict the time in which KM documents are editable by certain users?

Well, as far as I know there is nothing like that. But you could write your own KM Scheduler Task. A KM Scheduler Task is a job that is run due to a given schedule. You could write a KM Scheduler Task which adds the permissions to edit the document in the morning and removes the permissions in the evening. But be aware portal users assigned to the role super_admin_role will always be able to edit the document.
