how to find runtime value of header text and item text while saving delivery

Hi Folks,

Can anyone help me to find the structure use to save old and nex value of header and item text while saving delivery . I have to compare if any change in header text or in item text from earlier maintained text I have to trigger output type.

Anyone please help to find field symbol or runtime structure for the same.
