create a variant with the necessary fields u want and assign it while defining the sales document type at Transaction Flow - variant.

Well you can do it by going to Tcode : SHD0

Also there is one more funcitionality in SAP called GuiXT where is more flexible for you to hide/Change the screen layout and also you can change the layout of the screen without much of Coding

I think you can do the same by going to VOV8 and select the order type and go to Transaction Flow and choose Display creiteria.reward if useful.
