Hai..
Cut over date is the time where u leave the legacy systems and transfer completely into sap..
say for Ex. u went live on Jan 1st.. But there is certain duration where u maintain both Legacy systems and SAP running paralelly.... After certain period u switch over to sap..
This Duration is called Cut Over date...
