You can delete article and customer in SAP Customer Checkout if they are not used in a receipt.

In the configuration - About/Information you will find the possibility to set article & Customer to inactive.

Furthermore some information can be found in the delivered documentation and also in SAP Note 2202185

The system will only delete the articles that were not used.
