Cut Over : The process of transitioning from one system to a new one.
CUTOVER PLAN : All documentation related to planning, preparing and executing cutover, describing how to lock down the system from a technical change management perspective, preparing the TSO for its new role and rolling out the SAP graphical user interface to all future end users.
Gap Analysis : Bridging the Gap by analysis the existing business process.

Gap analysis is one of the kind of matching business process of the exsisting system to the SAP R/3.
So that the proposed can be implemented in SAP with any changes in the requirements of the client.
for ex,
u r client is running their business process in non sap system, they want to convert their business process in to SAP R/3 functional consultants analyse the exisiting system in non SAP system process for the proposed system SAP R/3 systems to match or fit with SAP R/3 solutions.
so that in SAP if necessary they will go for userexists, Bapi ex to fit the solutions for the clients.

SAP tries to provide all the solutions but as you know it next impossible humanly i think.
the organizations process soem times may differ from one to one enterprize. i mean every organization has its own process some of them maynot have SAP standard solutions.
when u compare the original org process and SAP standardly available solutions there may be gaps.
you analyse these gaps to fill them.
whether they are through programs are through round about methods.

GAP Analaysis : simply you can say it the study what is provided by SAP standard and you can acheive requirement.
and analyse it could happen or not?
