How can I go into the system and find out whether the GL Accounting was configured using the OLD or the NEW method? Are there transaction codes or something that can be easily spotted?
you can see if document splitting is activated in config.
You can also check a normal journal and display the general ledger view, if the balance sheet entries have a profit center in them, document splitting is activated, if not, then it is not.

There are several steps to check if New GL is actiavated or not.
1.In SPRO if you see the menu paths with Finanancial account ( New), then new GL is set active in the system.
But, for a specific company code New GL (Document splitting) can be deactivated.
2.By default if its not an upgrade system, if its new system then New GL will be activated by default.
Normal (Entry)View and General Ledger views are different views, which an FI document can be seen.
Entry view displays fields how they are entered * In General ledger view, Inheritence of Segments if customised wil be shown.

Check Table : FAGL_ACTIVEC field ACTIVE for new GL activation. In the same table you can find some more fields to check document split..
SPLITMETHD Splitting method
SPLITDATE_CHECK System Date from which Document Splitting Is Checked
SPLITDATE_ACTIV System Date from which Document Splitting Is Active
