SAP GUI is the one which you process normally. Create Sales order, deliveries etc...by different Tcodes executing.
TCD is I believe Test case definition ie you will gave a name such as in future it will work as a macro. You will build the case and save it. In future if you want to use multiple scenarios ( 20 docs required), just run this once. It will save your time.
For testing purpose, we use this. Hope I answered your query.
