How to change the IDOC segment data

How to change the segment data for all IDOCs at one shot J.

For exmple E1EDK02-QUALF - 004

E1EDK02-RGID - 100000008 (Inquiry No)

to

E1EDK02-QUALF - 004

E1EDK02-RGID - 200000005 (Quotation)
