I want to update the quantity in 'Delivered Quantity field' in Schedule line Tab without creating the delivery. But the field is grayed out!
Is this possible to change it manually or Is there any way to update the quantity in that field without creating the delivery?

Even if it was possible, wouldn't it be illegal to manipulate the data in such way?
You are basically saying, that you delivered products to a customer without an evidence of the transaction taking place throughout the supply chain.
What is the Business requirement and what is that going to achieve with this
Why would you want to do that?
In SAP ECC this field is not stored in the database, it is calculated on runtime whenever the user opens this screen. What are you trying to achieve by modifying this?
