My requirement is to add Fund Center, Fund and Cost Center to the "Default Values" when creating purchase requisition. Looks like standard sap does not have those fields.

Can I add them through any config and/or program modification (user exits etc)?
as you see from your screenshot all fields available for defaults are from EBAN table, but your required fields will be in EBKN account assignment data. You can't default value to such fields if the account assignment category is not yet known.
