in new work books we do not directly embed a query instead it works similar to the web templates in 3.x where we use tables which are linked to data providers. and editing data providers can be done in a single screen .. and thats makes changing the queries easier.
If you are trying to delete the query assignment in the workbook, then you have to switch to "Design Mode" and the click on the "Analysis Grid" and in "Analysis Grid Properties" window delete Data Provider.
