Microsoft Tool or Third Party Tool to remove security settings when handover Windows 2008 server?

Hello Microsoft Security Experts,

we are using a hosting provider and have to leave it.
At the hoster we are running several Windows 2008 R2 server based VMware instances.
Our hoster wants to make us life hard as possible and claiming, they can’t provide us a backup and or VMware copy based on security issues.
The hoster stating, they would provide us hash keys that would allow us to hack into their system, if they would provide us a backup or a copy of the VMware.
We have been looking concerning the topic and found several good information about the security topic:

The question is, does Microsoft or third party products are available on the market that can support us here, so we don’t have to reinvent the wheel?
We using the Windows 2008 R2 servers for an ERP middleware solution and the installation was originally done by the manufacture of the middleware solution. It took over 8 weeks to just complete the technical implementation. We don’t having the resources to have the implementation done all over again.
As it is not uncommon practice, so sell and buy businesses that also includes IT infrastructure (like PC, servers), we have been wondering, if there exists tools, documentation that can be followed, etc. -> so IT infrastructure can be safely handover, even if they are running Microsoft OS.
It might be also the case, the topic of securing servers is also accomplished by setting correctly Microsoft Active Directory, by activating password, ticket, hash policies, etc. A hint in this direction would also help. Many thanks for your help.
