Reconfiguring Portal for different hosts?

I am currently building a proof of concept system where I am installing SRM 5.0. As part of the installation it also gives me the option to install EPC and EP in the same run as the SRM 5.0. The whole installation will be done on a single host.

In our production environment we have EP6 installed on a separate host.

The questions I had was that if I installed EP7 on this proof of concept server along with SRM5.0 on the same host, then at a later stage when we upgraded to EP7 on our production environment would it be possible to reconfigure to point to the Prod portal server or would there be issues since I already have it installed on this proof of concept host and the current production <SID> id would be different from the proof of concept <SID>?

Also is it better to install EP in a separate installation run than to bundle it in the same run as the SRM installation?
