We are testing Inbounds IDOC's to CRM to create PO's. In order to determine what the minimum data required is what I would like to do is take one of the successful PO's, generate an outbound IDOC from this, then turn that IDOC around and process it as an inbound, changing a few fields along the way. Is this possible ?.

The problem with the iDoc creation is that even the segments are optional, they are cross mandatory /if one exists, the other must as well/

But would be interested to hear what the difference is between them. We're raising Distributions orders (sales) from a PO details within an IDOC. Although I having a real nightmare creating a successful order (with detail lines). The messages say that I'm not supplying certain info, but I am, I can see it in the IDOC. Whether it's in the right place or not, I don't know.
I have requested a screen dump (WE05) from an IDOC that has been successfully processed, but there's been no takers so far. This woould really help as I could see what structures and data they used, although the configs will be different I feel sure it will help.

This should be possible.
You have to change the header, however. /inbound, outbound/
The K01\BELNR should be changed as well or you may get an error.
We are talking about ORDERS01, or ORDERS05.
