Hi,
"Configuring SAP R/3 FICO" by Quentin Hurst and David Nowak is one good book which explains the concepts of configuring SAP fairly well. However it does not explain the business processes. The business process of all the companies vary and may not be equally applicable to all.

Charles, as suggested by Swapnil, you can start with that book and understand configurations first, then you can take some sample blueprint documenation and do the configurations as per requirements of that client as testing project which will give more idea in terms of business processes.
